Jaggery — Guḍa and Its Properties
(अथ गुडस्य लक्षणं गुणानाह—)
Now, the characteristics and properties of Guḍa (jaggery) are described.
इक्षो रसो यः सम्पक्वो जायते लोहवद् दृढः ॥
स गुडो गौडदेशे तु मत्स्यण्ड्येव गुडो मतः ।
गुडो वृष्यो गुरुः स्निग्धो वातघ्नो मूत्रशोधनः ।
नातिपित्तहरो मेदःकफक्रिमिबलप्रदः ॥
Sugarcane juice that is thoroughly cooked and becomes hard like iron is known as Guḍa (jaggery).
In the Gauḍa region, Matyaṇḍi itself is considered to be Guḍa.
Guḍa is vṛṣya (promotes reproductive vitality), guru (heavy to digest), snigdha (unctuous), alleviates vāta doṣa, and promotes proper urinary function. It does not strongly alleviate pitta doṣa. It promotes meda (fat), kapha, and krimi (intestinal worms) and provides strength.
Properties of Old and Fresh Jaggery
Old Jaggery — Purāṇa Guḍa
(अथ पुराणगुडस्य गुणानाह—)
Now, the properties of old jaggery are described.
गुडो जीर्णो लघुः पथ्योऽनभिष्यन्द्यग्निपुष्टिकृत् ।
पित्तघ्नो मधुरो वृष्यो वातघ्नोऽसृक्प्रसादनः ॥
Old jaggery (Jīrṇa Guḍa / Purāṇa Guḍa) is laghu (light to digest), wholesome, and does not cause obstruction or excessive accumulation in the body’s channels (anabhiṣyandi). It strengthens digestive capacity and supports agni.
It alleviates pitta and vāta, is sweet in taste, vṛṣya, and is described as asṛk-prasādana, supporting the healthy state and quality of the blood.
Fresh Jaggery — Nava Guḍa
(अथ नवीनगुडस्य गुणानाह—)
Now, the properties of fresh jaggery are described.
गुडो नवः कफश्वासकासकृमिकोऽग्निकृत् ॥
Fresh jaggery increases kapha and is associated in the text with śvāsa (breathing disorders/asthma), kāsa (cough), and krimi (intestinal worms). It also stimulates agni (digestive capacity).
Jaggery According to the Anupāna
(अथानुपानभेदेन गुडस्य गुणानाह—)
Now, the properties of jaggery when consumed with different substances are described.
श्लेष्माणमाशु विनिहन्ति सदाद्रकेण
पित्तं निहन्ति च तदेव हरीतकीभिः ।
शुण्ठ्या समं हरति वातमशेषमेतं
दोषत्रयक्षयकराय नमो गुडाय ॥२८॥
Jaggery consumed with ārdraka (fresh ginger) quickly alleviates kapha.
The same jaggery consumed with harītakī alleviates pitta.
Consumed with śuṇṭhī (dry ginger), it alleviates vāta.
Thus, the verse offers salutations to Guḍa, which, when combined appropriately, is described as helping alleviate all three doṣas.

Jaggery Rice
Ingredients
Soaked rice – 1 cup
Fresh grated coconut – 1 cup
Jaggery – 1 cup
Ghee – 3 tbsp
Cloves – 2–3
Cardamom powder – ½ tsp
Nutmeg powder – ½ tsp
Saffron – ½ tsp
Sliced cashews and almonds – 2 tbsp
Method
Bring 2 cups of water to a boil in a saucepan. Add the jaggery, cardamom powder, and nutmeg powder. Stir until the jaggery dissolves completely and the mixture comes to a gentle boil.
Soak the rice for 30 minutes, then drain it well.
Heat the ghee in a pan and add the cloves. Add the fresh grated coconut and soaked rice, then sauté well over medium heat. Add the saffron and continue sautéing until aromatic.
Pour the hot jaggery syrup into the pan. Mix gently, cover with a lid, and cook until the rice is tender.
Open the lid occasionally and stir gently to ensure even cooking. Once the rice is partially cooked, add the ghee, cover, and continue cooking until done. Once the rice is fully cooked, switch off the heat and let it rest, covered, for 5–10 minutes.
Garnish with sliced cashews and almonds before serving warm..
